Ingredients
2 cups whole wheat flour
1/2 teaspoon salt
3 tablespoons vegetable oil
1/2 cup water (more if needed)
3 medium potatoes, boiled and mashed
1 large onion, finely chopped
2 green chilies, finely chopped (optional)
1 teaspoon cumin seeds
1 teaspoon garam masala
1/2 teaspoon turmeric powder
Salt to taste
Oil for deep frying
Step by step making process
Step -1
In a bowl, mix the whole wheat flour and salt. Add 3 tablespoons of vegetable oil and mix until crumbly. Gradually add water and knead into a soft dough. Cover with a damp cloth and set aside for 30 minutes.

Heat oil in a pan over medium heat. Add cumin seeds and allow them to sizzle. Then, add chopped onions and sauté until golden.

Add boiled and mashed potatoes, turmeric powder, garam masala, green chilies, and salt. Mix well and cook for 5 minutes. Remove from heat and let the filling cool.
Step -4
Divide the dough into equal portions and roll each into a ball. Roll out each ball to a thin oval shape and cut in half.

Take one half, form a cone by sealing the straight edge with water. Fill with the potato-onion mixture, then seal the open edge by pressing firmly.
Step -6
Heat oil in a deep pan over medium heat. Fry the samosas until golden and crispy, about 5-7 minutes. Drain on paper towels.
