Ingredients
1 cup semolina (sooji)
1 cup sugar
2 cups water
1/2 cup ghee (clarified butter)
1/4 cup mixed nuts (cashews, almonds, pistachios)
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
1/2 cup raisins
1/2 teaspoon turmeric powder (for color)
Step by step making process
Step -1
In a pan, heat 2 tablespoons of ghee over medium heat and add the mixed nuts. Sauté until golden brown, then set aside.

In the same pan, add the semolina and toast it on low flame until it turns light golden and emits a nutty aroma, stirring continuously.

In a separate pot, bring the water, sugar, and turmeric to a boil. Add the saffron strands if using.

Carefully pour the boiling water mixture into the toasted semolina, stirring continuously to avoid lumps.

Cook the halwa on low heat until it thickens and starts to pull away from the sides of the pan and also stir in the remaining ghee, cardamom powder, sautéed nuts, and raisins. Mix well for a rich flavor.
